If you have iAds in your binary you will not be able to run it on anything before iOS 4.0 and it will be rejected if you try and submit a binary like this.

You can still run the simulator from 3.2 onwards after upgrading.

In the iPhone Simulator try selecting Hardware -> Version -> 3.2

In the Downloads pane of Xcode's Preferences, download the iOS 7 or 7.1 simulator.

After it is downloaded, go to the Devices window (Window -> Devices) and click the Plus button to make a new simulated device with the system version you want. For example you might decide to make an iPhone 4s that's running iOS 7.

Now you'll be able to choose that device/system as the destination when you build and run.

In Xcode 6 , iOS simulator for iOS version 6.x seems to be deprecated.

Apple deprecates old technologies very aggressively. Formaly saying, you should deprecate support for older version of OSes such as 6.x.

If the Xcode doesn't provide older version of simulator, the only way to do this is to install older version of Xcode.

Go to Preferences…Components and you will see the option to install simulators for older versions of iOS.

Then go to WindowDevices and SimulatorsSimulators and you will be able to create simulator instances for specific devices running this version of iOS by clicking the add button in the bottom-left corner of the window.

the problem is that you have no other Simulator SDK installed which can be used. As @dorada has mentioned you have to install an older Xcode which in fact doesn't work because you're using Lion. I haven't tried it with Lion but principally it should work like before with Snow Leopard.

After you have an older Xcode version, mount the image an navigate with terminal to that volume. There should be a hidden folder Packages. open that folder with open . and locate the two .pkg files you need (e.g. iPhoneSDK4_0.pkg and iPhoneSimulatorSDK4_0.pkg) and install both.

They will appear in your root directory and you have to move them to your Developer dir (don't simply overwrite, it will delete all other SDKs. go to the last different folder it should be iPhoneSimulator4.0.sdk\ and copy that one)

DONE (and at that point I have verified it: it works on my Lion. I used the dvd image which I have started backup'ing since 3.2.1)

Unfortunately, there's no other solution than downloading older versions of Xcode.
I needed this a few months ago, and tried a lot of different things, but I didn't found a solution.
